Tomato Egg Ingredients * 4 eggs * Salt to taste * Neutral oil * 2 scallions(sliced) * 3-4 tomatoes(cut into chunks) * 2 tbsp water * 1 tsp soy sauce * 2 tsp oyster sauce * 2 tsp sugar * 2 tbsp ketchup * 1/4 tsp white pepper * 1/4 tsp msg * 1 tsp sesame oil Instructions 1. Prep ingredients by slicing scallions and cutting tomatoes into chunks. 2. Whisk eggs and season with a pinch of salt. 3. Heat 3 tbsp of oil in a wok on medium high heat. Pour eggs and scramble and once the eggs are set but are still slightly runny, set it aside(30-45 seconds). 4. Add 2 tbsp oil to the same wok and sauté the white portion of scallions(30 seconds). 5. Once fragrant, add the tomatoes and a splash of water. 6. Let that simmer and once the tomatoes become soft and release their juices, add soy sauce, oyster sauce, sugar, ketchup, white pepper, and msg. 7. Let that simmer and once thickened, incorporate the scrambled eggs. 8. Smash Burger Ingredients * Onion(thinly sliced) * 75/25 or 80/20 ground beef * Salt and pepper * American Cheese * Brioche Buns * Pickles Sauce * 3/4 cup mayonnaise * 1/3 cup ketchup * 1/4 tbsp mustard * 1/2 tbsp Worcestershire sauce * 1/2 tbsp pickle juice * 1/2 tsp smoked paprika * 1/2 tsp garlic powder * 1/2 tsp onion powder Instructions 1. Thinly slice onion using a mandolin or a knife. 2. Form ground beef into 4oz balls. 3. Combine burger sauce ingredients. 4. Heat cast iron/stainless steel pan on medium high heat for 2-3 minutes. It’s hot when water beads up. 5. Place balls on pan and season with salt and pepper. 6. Add a small handful of onions on top and smash down as hard as you can to make a thin patty. 7. Cook for two minutes, scrape and flip over. 8. Add cheese and buns(top bun first then bottom bun). 9. Garlic String Beans Ingredients * 1 lbs string beans * 8-10 garlic cloves * Neutral oil for frying * Salt to taste * 1/2 tsp msg * 1/4 White pepper Instructions 1. Wash and cut the ends off of string beans then thoroughly dry them with a paper towel. 2. Finely mince garlic and heat a wok or pot filled half way with oil until it reaches 375°F. 3. Flash fry string beans in batches for 45 seconds or until they start to blister. Remove and place on a paper towel lined tray. Wait for oil to reheat before frying next batch. 4. Remove oil saving a couple of tbsp to sauté the garlic. On medium heat, sauté garlic until fragrant(1 min) then add the string beans. 5. Panang Curry Ingredients * 1.3 lbs chicken thigh(sliced) * 4 oz panang curry paste * 14oz coconut milk * 4-5 kaffir lime leaves * 1 tbsp palm sugar * 1 tbsp fish sauce * Red chilies Instructions 1. Heat half of 14oz can coconut milk in a deep pan on medium heat for 2-3 minutes. 2. Once slightly thickened, add curry paste and stir. Once incorporated, simmer on medium low for 5-6 minutes until the coconut milk makes a bright red oil with the curry paste. 3. Add sliced chicken thigh and stir so the chicken is coated in the curry mixture. 4. Add coconut milk, and 3-4 torn kaffir lime leaves. 5. Cover and simmer on medium low heat for 10-15 minutes until the chicken is fully cooked through. Make sure to occasionally stir so the bottom doesn’t burn. 6.
